Quitting chocolate and crisps doesn’t mean you have to give up tasty snacks altogether. We could eat these healthy courgette crisps all day long and better still, they’re super quick and easy to make.
½ cup all-purpose flour
½ cup grated parmesan
½ cup panko crumbs
2 courgettes, cut into slices
2 large eggs
Heat a little vegetable oil in a large pan over medium heat.
In a large bowl, combine the flour and panko crumbs.
Working in batches, dip the courgette slices into flour, then into the beaten eggs, then into the panko mix.
Take 5 – 6 courgettes at a time and add them to the heated oil. Leave to cook on each side for 1 minute until golden and crispy.
